RED WINES
(TECHNICAL PROCEEDING)
Red wines are made in the cellar of Castelletto d'Orba. They are:
DOLCETTO D'OVADA D.O.C.
BARBERA MONFERRATO D.O.C.
BARBERA MONFERRATO D.O.C. vivace MILEJA
Red wines are still obtained following the traditional way.
Grapes are selected and manually picked up, then pressed with the sharing of the grapes-stalks and put in the
vinification tanks where they work with the solid parts as peels, pulp, grape-stones and they are pressed again
only by ending the alcoholic fermentation.
According to the lenght of the soaking and of the racking, we can obtain fine fresh, live wines to drink right
away or wine for aging.
DOLCETTO D'OVADA D.O.C.
(Dolcetto grapevine 100%)
When young is a very elegant and smooth wine, normally it doesn't need long period of ripening and aging; it
has a quite short working, so that to obtain a ruby -red colored wine, a vigorous and persistent fragrance, very
fruity and vinous.
Opposite to his italian meaning, it's a red dry wine with a typical and agreable gently - bitter or almond flavoured
backtaste.
It's full-bodied with a right balance beetwen sourness and alcoholic degrees.
In wonderful vintages, as in these last 4 years, from 1996 to 1999, we can have a longer grapes ripening and aging
and a longer fermentation that gives an elitarian wine, with a well-developed and complex bouquet: the DOLCETTO
D'OVADA SUPERIORE.
FOOD LINKS: we can join this wine with refined roast - beefs with red or white meat, with special and typical
AGNOLOTTI(high quality hand made pasta filled with vegetables and shrudded meat), with TAGLIERINI(artistical thin
hand made pasta) with sauce; a nice wine for a complete meal.
SERVING TEMPERATURE : 18°C - 20°C - we advice to lay down bottles.
BARBERA MONFERRATO D.O.C.
(100% BARBERA grapevine)
BARBERA OR "THE BARBERA" ,as our grandfathers called it, represents the real history of Piedmont and even more of
the MONFERRATO area; it mirrorrs its strong and generous people character.
It's a great red wine, dry, full-bodied, elegant in this refined in barriques' version.
This wine is drawn from 40 years old vineyrds.
The selection of grapes is very severe because they are picked by hand; after that we proceed in pressing and in a
traditional fermentation with a controlled temperature.
Racking comes after 15 days and the refining is made in Barriques , little oak barrels (capacity of 225 Liters).
In this way, hints of hardness, due to the natural sourness of this wine, get softened by the noble tannine, obtaining
a very elegant and full-bodied wine with an ample bouquet.
FOOD LINKS: perfect with boiled meat, roast-beef, braised beef and seasoned and important cheese.

CARING AND SERVING TEMPERATURE: if well cared, it has a natural mid-term life as all great wines;bottles had better lay down.
The advice is to open the bottle 30 minutes before serving it, pouring it in a decanter to a temperature of 18°C-20°C, and
drinking in glittering big crystal glasses.
BARBERA MONFERRATO "MILEJA" LIVE D.O.C.
(100% BARBERA garpevine)

Besides the refined BARBERA MONFERRATO, we produce the BARBERA live "MILEJA",our traditional family's nickname,
that is fitted for a ready and quick drink, flavoured, slightly sparkling, dry with a good ruby-red color, really
apreciated by young people.
WHITE WINES

Our white wines are made in the village of Gavi (AL); they are:
GAVI D.O.C.G.
"LE LAMPARE" a white sparkling wine.
MOSCATO D.O.C.
KASCER WINES "OVADIA"
Our white wines are obtained from the wine-making of selected grapes, directly by us; after controlling the sugarly
degree, the sourness, the PH value, we settle the right period for vintage that is done regularly by hand, with more
garpes-harvestings to have a further and deeper selection of grapes.
Selected grapes are softly pressed to obtain the flowered must that is ,then, cleaned and made working to a controlled
temperature till a barren embottling to conserve and protect the flavour, the bouquet and avoid early oxidations.
GAVI D.O.C.G.
( Cortese di GAVI grapevine 100%)

It is the most famous piedmontese white wine; it is a very elegant wine, rich of refined and fresh scents, with a fine
and ample bouquet,with light straw yellow color with some little light-green reflexes, with a full, armonic and fruity
taste.
FOOD LINKS: with refined sea- or river-fish dishes, with shellfishes, white light-cooked meat and also with appetizers.
SERVING TEMPERATURE : chilled at 9°C - 11°C
"LE LAMPARE"
white sparkling wine. (Cortese grapevine)

This wine is made working in autoclave for at least 60 days.
We have a tastefull sparkling wine, dry, armonic with a natural fermentation, with a light
straw yellow color, with a persistent perfume.
FOOD LINKS: suited as appetizer, with refined horse-d'oeuvres, but also with pizzas, with our very good buns and chick-pea
paps(FARINATE), very good in our area and in the close Liguria.

SERVING TEMPERATURE : chilled at 9°C - 11°C
MOSCATO D.O.C.
(100% MOSCATO GRAPEVINE)
It is with any doubt the wine of celebrations, parties, joy, its flavours remain to orange flowers, lime, acacia, honey and lemon.
It's very sweet-smelling, aromatic and characteristic.
It's, of course, the first approach to wine for non-drinkers or for children seen its extreme delicacy.
FOOD LINKS: perfect in accompaning sweets, fruits (specially strawberries) and desserts.
KASCER WINES
"OVADIA"
Kascer wines are made in our cellar by the house "OVADIA"; all the vinification process is followed by the Rabin HADDAD, that has been working
for a long time in Italy, France and California, on the Kascer wines making.
Our products are: DOLCETTO D'OVADA D.O.C. on KASCER method and BARBERA MONFERRATO D.O.C. on KASCER method.
The DOLCETTO D'OVADA D.O.C. '98 KASCER had a very important result because vit was rewarded
in a very important concourse reserved to all DOLCETTO D'OVADA in Tagliolo Monferrato.This
concourse has been wanted by the National Departement of Agricolture.
