Harvesting and making: manual harvesting generally carried out within the first half of September; after a strong selection, grapes are softly pressed with consequent free run-must cleaning, then fermented at controlled temperature in order to keep flavours

Colour: straw yellow with light green reflections

Scent: delicate, persistan, pleasant and fruity

Flavour: dry, fresh, harmonic, good bodied

Serving temperature: 8-10°C

Food pairing: perfect as aperitif, with seafood, oysters, any kind of fish, raw or cooked, vegetable flans

Production area: vineyards located in the Municipality of Castiglione Tinella (CN)

Exposure: south

Variety: 100% Cortese

Soil: sand and lime-stone

Harvesting and making: manually carried out generally in the second half of Ausgust; grapes are softly pressed and worked at controlled temperature, cold stabilization and sterile bottling

Colour: straw yellow with gold reflections

Scent: aromatic, good tones of sage, lemon, lime, acacia, honey, light orange notes

Flavour: sweet, fresh, fragrant, reminds to nose tones and small pastries, very characteristic

Serving temperature: 8-10°C

Food pairing: perfect with all kind of sweets and cakes, fruits (especially strwaberries), it may be paired also with some far east recipes that have spicy and light sweet notes

Production area: vineyards located in the Municipality of Castelletto d'Orba (AL)

Exposure: east, south-east

Variety: 100% Cortese

Soil: sandy-calcareous

Harvesting and making: soft pressing of the grapes, vinification in white, at a controlled temperature

Colour: straw yellow with light green reflections

Scent: fruity, pleasant, persistent

Flavour: dry and pleasant with fresh and harmonious taste

Serving temperature: 10°C

Food pairing: deliciously accompanies fish dishes, oysters, seafood, soups, baked with vegetables; also excellent as an aperitif

Soil: lime-stone with sandy stripes

Harvesting and making: end of August / first week of September; after a strong grapes selection maiking is the traditional for dry white wine with controlled temperature in stainless steel vats

Colour: straw yellow with light green reflections

Scent: light, persistant, fruity with vegetal notes

Flavour: dry, fresh, smooth and medium bodied

Serving temperature: 8-10°C

Food pairing: good as aperitif, with fish and white meat, raw and cooked based vegetables recipes

Soil: flinty and calcareous

Harvesting and making: after manual harvesting, classic white wine making in stainless steel tanks at controlled temperature with light "prise de mousse" by refermentation in pressure tank

Scent: Delicate, persistent, light flowery

Flavour: dry, fresh and harmonic

Serving temperature: 8-10°C

Food pairing: very good as aperitif, with light starters, fish-based dishes, perfect with pizza and the traditional chickpea pie
